170 g Azúcar
1,5 g Gelatina en polvo ó 1 Hoja de gelatina
5 g Almidón de maíz (maicena)
200 g Nata fría (35% materia grasa)

ELABORACIÓN DE LA MOUSSE

1. Pon la nata a enfriar en el congelador unos 15 minutos antes de usarla.
2. Hidrata la gelatina. Si es en hojas solo tienes que introducirla en agua fría y esperar unos minutos para usarla. Si es en polvo, introdúcela en un recipiente junto a unos 10 ml de agua y resérvala.
3. Tritura las yemas, el huevo, el almidón, el jugo de limón y las hojas de albahaca. Lleva esta mezcla al fuego sin dejar de mover y cuando espese apártala. Añade la gelatina ya hidratada, asegúrate que esté bien disuelta, y reserva.
4. Bate las claras y cuando comiencen a espumar añade la mitad del azúcar. Sigue batiendo y termina de agregar el azúcar restante. Bate hasta que tenga una buena consistencia.
5. Introduce el merengue en la mezcla de limón con movimientos envolventes y reserva.
6. Monta la nata que tenías enfriando en el congelador y añádesela a la mezcla anterior una vez haya enfriado un poco con movimientos envolventes (la crema de limón junto al merengue debe estar a unos 30-35ºC como máximo)
7. Rellena los vasitos de postre e introdúcelos en la nevera unas horas antes de comerlos
8. Sírvelos con unas hojas de albahaca.
